Mango Salsa
from Cooking Light,
May 2002
3 cups cubed, peeled,
ripe mango (approximately 3 mangoes)
1 cup chopped green
onions
½ cup chopped
fresh cilantro
1/3 cup fresh lime
juice
3 tbs finely chopped,
seeded jalapeño pepper (2 small)
1 tsp sugar
½ tsp salt
Combine all ingredients,
toss well, cover, chill
Yield 6 servings
@ 1/2 cup per serving

Mandarin Orange Cake
from Colesburg Area
Cookbook (Iowa)
1 cup sugar
1 cup flour
1 egg
1 can mandarin oranges,
drained
1 tsp baking soda
½ tsp salt
1 tsp vanilla
Combine all ingredients
in bowl; beat 2 ½ to 3 minutes. Bake 30-35 minutes in 350 degree
oven in an 8-inch buttered pan.
Topping:
1 cup brown sugar
4 tbs butter
4 tbs milk
Bring topping mixture
to a boil; pour over cake. Serve warm or at room temperature.

Beeb's Broccoli Salad
1 qt broccoli (I didn't measure just
judged, felt we needed more)
1 cup golden raisins
1 cup halved grapes
1 cup chopped sweet onion
8 slices bacon, fried crisp and crumbled (I used turkey bacon and fried
it without any added fat, then cut it with scissors)
1 cup dry roasted peanuts
Dressing: I added a little more mayo as I added more broccoli
1 cup Hellman's may (I used Lite)
1/2 cup sugar
3 Tb vinegar
1/2 tsp curry powder
Mix dressing ingredients together and add to salad ingredients minus the
peanuts which are added just before serving.

Cinnamon Rollups
24 slices firm white sandwich bread, crusts trimmed
1 8 oz brick cream cheese (not 1/3 less fat), softened
Yolk from 1 large egg
1 1/4 cups sugar
1 Tbsp ground cinnamon
1 stick (1/2 cup) unsalted butter or margarine, melted
1. Roll bread slices flat with a rolling pin. Mix cream cheese, egg yolk
and 1/4 cup sugar. Spread a scant Tbsp on eah slice; roll up tightly.
2. Mix remaining sugar and cinnamon in a shallow bowl.
3. Brush rollups (including ends) with butter; roll in sugar mixture to coat.
Place on cookie sheet; refrigerate or freeeze at least 2 hours. (To
store, freeeze up to 2 months.)
4. Heat oven to 400 degrees F. Bake rollups on cookie sheet 9 to 12 minutes
until bottoms are glazed and golden brown. Remove immediately to a wire rack
to cool. Cut each diagonally in 3 pieces. Eat warm or cold.
Makes 72 pieces.
